STUFFED APPLES
2 C. sugar 9 1/2 oz. cinnamon candy (red hots) 1 1/2 C. water 8 Red Delicious apples Peel and core apples; make syrup of water and sugar. Add cinnamon candy and continue cooking until candy melts. You may add red food coloring. Cook 4 apples at a time by placing them in syrup and turning constantly until tender and red colored. (Check tenderness with toothpick -- easy to overcook). Cover and chill overnight.
Stuffing: 1 8-oz. pkg. cream cheese 11/2 C. chopped pecans 2 1/2T. mayonnaise 8 whole cloves, for garnish 2 T. milk Green gumdrops, for garnish Cream the cheese, mayonnaise and milk; add nuts. Fill center of apples, rounding mixtures on top.
Roll out green gumdrops, shape or cut into pattern of apple leaves. Add 1 clove and 1 or 2 gumdrop leaves to top of each apple to look like a stem and leaves. Remove cloves before eating. Serves 8.
This is pretty and different. Can also be used as a dessert if you add 1/4 cup ~onfectioner's sugar and 1 teaspoon vanilla to stuffing mixture.
