DATE PUDDING

   Wash 1/2 cup pearl tapioca, soak in 1 quart water overnight. Put in double boiler and add 1/2 pound chopped dates, 1/2 cup nuts, 2 cups brown sugar, pinch of salt and 1 teaspoon vanilla. Cook over slow fire several hours or until transparent, Serve with whipped cream. Put in jars in refrigerator. Can be made 3 to 4 days ahead, as it thickens as it stands.
