ICE CREAM YULE LOG
1 qt. (cylinder) vanilla ice cream 1/2 tsp. vanilla extract 6 T. sugar 3 sm. red gumdrops, cut up 2 T. unsweetened cocoa 9 leaf-shaped green gumdrops 1 C. heavy cream Remove ice cream from container, keeping shape; place on chilled serving platter and freeze for 15 minutes. Combine sugar and cocoa. Whip cream with sugar-cocoa mixture and vanilla until just stiff. Use to frost ice cream cylinder. Spread to emphasize bark of log. Roll red gumdrops into small balls to resemble holly berries. Add green gumdrop leaves. Store in freezer until ready to serve. To serve, cut crosswise into slices.
Note: If longer than overnight, wrap in foil the next day.
You may roll green gumdrops thin and cut out your own holly leaves by using the tip of a spoon.
