GERMAN POTATO SALAD III
3 lb. potatoes, cook with skins on 1 med. sweet onion, sliced or dices
until almost done 3/4 lb. bacon, fried to well done (save grease) Salt and pepper, to taste 1/2 C. or more water 1/2 C. or more cider vinegar Approx. 1/2 C. sugar Cornstarch, to thicken Cook and cool potatoes. Peel and slice in a large bowl. Add salt and pepper to taste; add onion. To bacon grease, add vinegar, water and sugar. Bring to boil and thicken with cornstarch until glossy. (Taste. If not sweet, add more sugar. If not sour, add more vinegar. It needs to be a strong sweet-sour taste.) Pour over potatoes; taste again. You may need more salt. Bake, covered, in a 350 degree oven for about 45 minutes or until done.
