MINI CHEESECAKES
| 12 vanilla wafers | 1 tsp vanilla |
| 2 8-oz pkg. cream cheese, softened | 2 eggs, beaten |
| 1/2 C. sugar |
Line muffin tins with cupcake liners. Place 1 wafer in each liner. Mix cream cheese, vanilla and sugar on medium speed of electric mixer until well blended. Add eggs. Mix well. pour over wafers, filling 3/4 full. Bake for 25 minutes at 325 degrees. Remove from pan and chill. Top with your favorite fruit pie filling or pudding or fresh fruit.
