FRENCH-FRIED ONION RINGS

1 lg. Vidalia Onion 1/2 C. self-rising flour
2/3 C. milk  

   Peel onion; cut into 1/4 inch slices and separate into rings. Heat fat or oil (1 inch deep) to 375 degrees in a large skillet. Beat remaining ingredients with rotary beater until smooth. Dip each onion ring into batter, letting excess drip into bowl. Fry a few onion rings at a time in hot fat about 2 minutes or until golden brown, turning once. Drain. Makes 3 or 4 servings.
