SLOPPY JOES

Per Pound of Meat:
1 lb. ground chuck 1 tsp. salt
1/4 C. green pepper (optional)*    1/8 tsp. pepper
Ketchup, to desired consistency 2 tsp. Worcestershire sauce
1/2 C. chopped onion

         *Most commercial brands of Sloppy Joe sauce have green pepper in them.
    I hate to see young women spend mega-bucks on Sloppy Joe sauce -- so here’s how our Mom did it.
Brown meat with onions and green pepper; drain fat. Add ketchup to desired consistency. Add remaining ingredients. Let your Joes simmer covered on low heat for 1 hour or so, or cook 5 minutes and refrigerate. Flavors will blend that way. Makes 5 to 6 sandwiches per pound of meat.
    If you want to save more money (as ketchup can be costly), use tomato sauce or tomato paste, plus water, some sugar and a touch of vinegar.
    If you really must, use 1 can or envelope prepared mix and make the rest of the sauce your own.
    When / got married, I learned a new way to serve these. Try melting a slice of process cheese on your sandwich and top with hamburger dill slices and some mustard. We also like them open-face using a fork and knife to eat.
