SOPHIE'S POTATO SALAD
6 C. cubed potatoes 1/2 C. sliced celery 1/2 C. chopped green pepper (optional) 1/2 C. chopped onion 3/4 C. salad dressing 1 T. mustard 1/2 tsp. celery seeds 1/2 tsp. salt, or to taste 2 hard-boiled eggs, shelled (for garnish) Lettuce leaves Paprika Cook potatoes in skins in salted, boiling water; cool, peel and cube. Prepare celery, green pepper and onion; set aside. Mix together salad dressing with mustard, celery seeds, and salt. Add vegetables and mix together lightly. Place lettuce leaves around glass bowl. Fill bowl with potato salad. Slice hard-boiled eggs, decorate top of salad, and sprinkle with paprika. Refrigerate.Small amount of dill pickle relish may be added to taste
