SUNSHINE CAKE
6 egg yolks 1/2 tsp lemon extract 1/2 C. sugar 9 egg whites (1 C.) 1 C. sifted flour 1/2 tsp cream of tartar 2 T. cold water 1/2 tsp salt 1/2 tsp vanilla 1 C. sugar 1/2 tsp almond extract Beat egg yolks until thick. Gradually beat 1/2 cup sugar into egg yolks. Beat in flour alternately with a mixture of cold water mixed with vanilla, almond and lemon extracts. In another bowl, beat egg whites with cream of tartar and salt until stiff. Gradually beat remaining 1/2 cup sugar into whites. Gently fold egg yolk mixture into egg whites. Pour into ungreased 10 inch tube pan 4 inches deep. Bake in slow 325 degree oven for 60 to 65 minutes. Remove from pan after 45 minutes.
