FRESH STRAWBERRY SALAD
2 3-oz. pkg. strawberry Jell-O 1/2 C. finely chopped nuts 2 C. hot water 1 pt. fresh strawberries 1 1/2 C. cold water slightly sugared 1 8-oz, pkg. cream cheese Pour the hot water over the Jell-O and stir well to completely dissolve. Add cold water. Shape cream cheese into balls using 1 teaspoonful for each ball. Roll balls into nuts. Place them evenly-spaced into 9" ring mold. Cover with the lightly sugared strawberries. Pour the cool Jell-O over the cheese balls and berries. Chill until the Jell-O is set. Unmold on large serving plate. Serves 8.
We always make this using individual molds, making the cheese balls slightly smaller. Serve on a bed of lettuce with a dollop of mayonnaise, sour cream or even Cool Whip on top, it is not only pretty, but delicious and is a perfect salad for Christmas dinner.
