DEVILED EGGS - HURLEY STYLE

1 doz eggs, hard-boiled paprika
2 slices boiled ham, minced* Mustart, to taste (optional)
Mayonnaise

     * The ham should be minced so finely that it cannot be detected as ham. Add more or less ham according to taste.
    Peel and cut eggs in half. Remove yolks and place them in a good-sized bowl. Mash well. Add finely minced ham and enough mayonnaise to moisten. Yellow mustard may be added for flavor. Mix well. Spoon back into egg whites and sprinkle with paprika. Slice green and black olives and thinly slice carrots for decoration on top. Place on platter along with green and black olives, cherry tomatoes and parsley.
