Week of March 25, 2001
BLUEBERRY PIE

4 C. blueberries 1 T. lemon Juice
1/2 to 3/4 C. sugar 2 T. butter
1/4 C. flour Double pastry pie crust
1/4 tsp. salt

     Stir together sugar, flour, salt and lemon juice. Add blueberries and mix. Pour into pastry shell. Dot with butter. Place top crust on pie and cut slits in top for steam to escape. Bake in 450 degree oven for 35 minutes
    May be served warm with Cool Whip or ice cream.
