COOLIDGE MINCEMEAT

1 lb. boiled beef, ground twice 1/2 lbb citron, chopped fine
1 lb. suet, ground twice 2 lb. sugar
1/2 peck apples, pared 2 1/2  qt cider
    cored and chopped fine Pinch salt, cinnamon, cloves and 
1 lb currants, chopped fine       nutmeg, to taste
2 lb, seeded raisins, chopped fine

     Boil apples, currants, raisins and citron with cider and sugar for 4 minutes. Pour in the meat and suet. Add salt and spices last. Add jelly or fruit. Cook until thick. One quart will make a very thick 9 inch pie.
